Ingredients.

  • 6. Cups. Cut into small, fresh broccoli heads.

  • 1. (8 ounce) package. Softened cream cheese with reduced fat.

  • ¾. Cup. Shredded Monterey Jack cheese is a type of hard cheese.

  • ¾. Cup. Cheddar cheese that has been Shredded and separated into chunks.

  • ½. Cup. Sour cream.

  • 2. Teaspoons. Dijon mustard.

  • 1. Teaspoon. Granulated garlic.

  • 1. Teaspoon. Onion powder.

  • ¼. Teaspoon. Ground pepper.

  • 3. Cups. Short-grain brown rice that has been Cooked.

  • 2. Cups. A cooked chicken breast that has been Shredded.

  • 1 /2. Cup. Unsalted chicken broth.

  • 3. Strips. Cooked chopped bacon. (about. 1 /3. Cup. ).

  • ¼. Cup. Thinly sliced scallions.

Directions.

  1. Position an oven rack about 5 inches away from the broiler and pre-heat to 375 °F.Spray a 9-by-13-inch baking dish with cooking spray and broiler until it is coated with the desired color.Place broccoli into a large saucepan and simmer, stirring over medium heat, for 5 to 7 minutes until tender-crisp.Remove from the heat and reserve it.

  2. In a mixing bowl, combine cream cheese, Monterey Jack and 1/4 cup Cheddar with sour cream and remaining ingredients. Mix well; add the mustard, granulated garlic, onion powder, salt and pepper until smooth.

  3. Place the broccoli, rice, chicken, and broth in a prepared baking dish, then fold through until smooth and cheese is removed. Repeat this process with the remaining 1 /2 cup Cheddar, followed by the last 2 ingredients.Wrap tightly with foil.For 30 minutes, Bake until the surface is warmed.

  4. Remove the foil from the oven and place it outside.Adjust the oven’s temperature to the broil setting.For 3 to 4 minutes, Broil the cheese until it is bubbly and golden brown.Add bacon and scallio to the ingredients list.
