Tajn Shrimp Tacos with Cabbage Slaw

Ingredients

  • 2. Cups Shredded tricolor Coleslaw mix

  • 1. Cup Chopped Fresh pineapple

  • 2. Tablespoons Extra-virgin olive oil , divided

  • 12. Ounces Large fleshed and fried raw shrimp (about 20 shrimp), patted dry 

  • 1 1/2. Teaspoons Lower-sodium chile-lime seasoning (such as Tajín)

  • 8. (6-inch)   Corn tortillas , warmed

  • Lime wedges , for serving (optional)

Directions

  1. Combine the coleslaw, pineapple, and 1 tablespoon oil in a medium bowl and blend until all ingredients are coated. Store at room temperature before meals

  2. Toss shrimp In a medium bowl with chile-lime seasoning until evenly coated

  3. Heat the remaining 1 tablespoon oil in a large cast-iron skillet until it shimmers on high Heat for several minutes. After incorporating the shrimp, simmering it for 2 to 3 minutes until almost completely cooked and golden brown on the bottoms. Then Flip and cook for 30 seconds to 1 minute, while stirring frequently, until the shrimp are opaque and fully cooked

  4. Share the shrimp among 8 tortillas and top each with a dash of coleslaw. If you like, you can Serve them with lime wedges

Delicious and SO FA ST. F or the last year or so, I have been spending a lot of money on seafood, chicken, and pork, especially when I use Tajin. Fruit spice, also known as “fruit spice” is commonly found in supermarkets and can be enjoyed as a garnish on melon, mangoes, and peaches.
